Khejur-gurer Paayesh with love that lives on



My grandmother was 14 years old when she first met my grandfather. My Grandfather was 21.They only heard of each other voices behind the veils when they decided to get married. She was a high school student. He was a railway apprentice.

My great grandfather was a progressive man. He wanted his daughters to be educated. This goes back to the day and age where daughters from noble Indian households lived in veiled existence and could only be homeschooled. He chose a bright railway apprentice as his daughters tutor, the only imposed condition was that he could not see the daughters. There was a thick curtained veil between my grandmother, her sister and their tutor.

He spoke to them in Bengali, saying “Amara shudhu Maths, english aar science shikhbo” (We will learn Maths, science and English) She giggled and said “yes”, she was known for her language skills.  “You speak English.” he asked, a little startled. “My father is an English Professor.” She answered as a matter of fact.
And so it began, a love story (of sorts) that began in India in 1943, celebrated the Joy of being in an independent India around four years later with a child in tow. Later landed in a sleepy little British Raj created town called Jamalpur.

I still have vivid memories of this sleepy little town, as almost all my summer vacations were spent there. Jamalpur of the 90s has always welcomed me with a faint smell of young jackfruit and a garden swaddled with overripe Jamun. My afternoons were often spent picking the berries from the garden and rest of the day was whiled away eating it. My entire summer vacation seemed to roll into one laugher filled month full of fun , frolic and food . She was the one who brought that slumbering vacation in that sleepy little town to life, atleast I love to believe that.

When my parents announced that they will be visiting me for a day this week, I thought that there could not be a better time to surprise my mom with my grandmothers specialty the Khejur Gurer Payesh (Milk pudding with date palm jaggery. Topping it with flaky almonds and cashews, toasted pumpkin nuts or nothing at all, this tastes divine.  But, somehow this khejur-gur just doesn't seem the same when it’s consumed without putting a fight with my cousins for an extra helping or enjoyed in a skyscraper which does not overlook a garden smelling of ripe jackfruit.


What it does have is a hint of that veiled love story .


Khejur-gurer Payesh (Rice Pudding with Date Palm Jaggery)

Ingredients

1 lt Full cream milk
50 gm. of gobindobhog rice or kaala-jeera rice
100gms of sugar
50-100 gm. of khejur-gur (date palm jaggery) depending on your sweetness.



How I did It
Wash , clean and drain rice.

Pout the full cream milk on  aheavy bottom pan and bring it to a boil.Now add rice and keep stirring , so that the rice does not stick to the bottom of the pan.  Keep doing it till the rice is cooked and Milk looks thick enough. It took me around 30 minutes.

Once rice is doe , add the sugar and you need to stir again till the extra water from the sugar is evaporated and milk is thick again.

Now that you think that the milk has reached the desired consistency, you can turn off the heat and after a few minutes, add the Khejurer gur.

The heat will aid in the melting process of the Khejur er gur.

Once the Khejur er gur is all soaked up , the color will turn to caramel.

I added toasted pumpkin nuts for some crunch; you can add whatever you fancy.

Aunt's Apple Cake - The last Bite of October


October is flooding my pantry with apples !

I’m frantically thinking of things to do with ‘em – instead of just biting the glorious red beauties in a bid to keep the doctors away.

I’m pouring into blogs , drooling over the pictures…inertia is gripping me at large. Too meticulous a recipe, and I’m scared to even attempt. Too simple and I start feeling dumb. Baking is not really my forte, but BAKE I will.

Bake what is the question.

After mopping around (and eating a few more apples I get the answer)  - re-creating an old apple gem. I remember the taste vividly.

It was a few decades back at my aunt’s place in Haldwani (foothills of Nainital). The apples and berries were in full bloom.She served this delicious dessert of an apple cake with home-whipped cream -a perfect anecdote to a balmy winter night.

I can't remember what was the occasion for the melt in my mouth after dinner dessert. All I remember is the taste. Maybe the occasion was me. 

It must have been that good to have had made a permanent place in my little brain. Good enough to make me miss my aunt(even after decades of not meeting her in person) and her fresh whipped cream with hot apple cake, it’s like they were made for each other.

The perfect marriage.

Mushy Apples cozily nestled in a bed of warm crumbles with a dollop of fresh cream. 

It is afterall the last bite of October!

Aunt's Apple Cake



3/4 cup all-purpose flour/Maida
3/4 tsp baking powder
4 large apples (I used red juicy variety-peeled an  cut to thin slices)
2 large eggs
3/4 cup sugar
3 tablespoons dark rum (optional)
1/2 teaspoon cinnamon powder
8 tablespoons unsalted butter, melted and cooled


1 Preheat oven to 180 C. Lightly grease and flour a 20x30cm cake tin.
2. Beat vegetable butter and eggs until foamy. Add the sugar, flour, cinnamon, baking powder, salt and Rum; mix well.
3. Line the diced apples on the cake tin. Spoon mixture into prepared tin (it will be very thick).

4. Bake in preheated oven for 30 to 40 minutes. Cool cake in tin for 10 minutes before removing.


PS : I made it a grown up cake by adding rum and savouring with Baileys. You can ignore the Rum and serve with clotted cream or Jam to kiddies.


Storing : This cake remains moist for days together. According to my aunt, it gets more comforting with each passing day. Leave the cake on its plate and just press a piece of plastic wrap .

No Bake Chocolate Pie



Every once in a while we all face scenarios wherein we have to cater to guests which puts our patience and skill of cooking to test. So it goes, yesterday it was mine and hubby’s turn. We thought of individually catering to the tastes of 6 different guests, and all of them with own dietary needs and requests, and an uneven age group ranging from four to forty!

Initially it felt more like the doing the 'science of maths' than the 'art of cooking'; taking headcount, scribbling down the menu and the process involved tedious arithmetic of adding and subtracting, buying ingredients after taking the existing stock into account and finally getting down to business of cooking ; multiplying the recipes meant for two to cater eight! Who says cooking is a dumb housewives job! My mind is still droned in all these numbers. However, the numbers cant surely take into account the sounds of laughter orchestrated with the tinkling of glasses which filled our house yesterday , the fussy four year old’s enchantment with ‘gems’ on her dessert and the happy burp of the filed tummy. Feels incredible! So I gather, its art after all.

Yesterday we tried tons of new recipes, and some were truly a HIT and surprisingly they took so little time to make, here is one of my personal favourites adapted from Aayis Recipe.


No bake Chocolate Pie



With guest list which comprises of anyone under 5: chocolate is a must , or so my instincts told me and the smile on my little guests face confirmed my doubts.So here is the easy no bake choclate pie recipe, which is sure to bring a smile on your little ones face too.


Ingredients:
3 packs of Parle G (or any glucose biscuit)
2 heaped tbsp cocoa powder (sugarless)
½ cup chocolate chips (optional)
1 tsp instant coffee
1 cup fresh cream
1/2 cup warm milk
1 cup granulated sugar
Sugar dust/Gems for sprinkling on top

Method:
If you are using glucose biscuit, try and fetch a rectangular or square large bottomed pie vessel to keep up with the shape of the biscuit. Line the pie dish with 2 layers of biscuits and soak them with 1/4 cup milk.

In a separate bowl, mix sugar, chocolate chips vanilla and cream. Mix slowly to get a uniform mixture. Add sugar as per your taste. Drizzle this mixture on the soaked biscuits. Top it with a biscuit line up again. Repeat the process.

Serve chilled, not frozen. .
